Production area: Castelvenere (BN), from property vines;
Vines: all of them are property of al foglio 6 particelle 25,27 of Castelvenere
Vine: Falanghina del Sannio in purity;
Tipe of soil: on an ignimbrite matrix (campania grey tuff);
Vine exposition: light exposition toward south
Agronomic features:  almost 3000 stump per hectare, rows, with a production of almost 3kg each stump, cultivated with "environmental friendly" cryteria (PRLFI Regione Campania)
Harvest time: the last ten days of september;
Vinification: grape gathered in small boxes is transported to the winery; vinified on white with a light pressing, must cold settled Fermentation: at right temperature controlled in winemakers of thermo conditioned steel;
Aging: lees then, 3-4 months in stainless steel's reservoir and into the bottle;
Alcoholic grade: 13,00% vol
Packing: bordolese troncoconica sofia;
Closing: cork;
Storage: possibly horizontally, avoiding sudden changes in temperature, away from heat sources Organoleptic features: pale yellow, crystalline. The bouquet is fragrant, intense and persistent, fruity with floral scents. The taste is dry, fairly soft, fresh acidity, good structure and persistence, balanced and harmonious.
Caratteristiche organolettiche: di colore giallo paglierino, cristallino. I profumi sono fragranti, intensi e persistenti, fruttati con sentori floreali. Al gusto è secco, abbastanza morbido, fresco di acidità, di buona struttura e persistenza, equilibrato ed armonico.
Serving temperature: 8°-10°C
Pairing suggested: classic pairing with fish and with dishes cooked light, sea and garden. Excellent with raw fish and meat, but also to match with dishes of a certain structure, more elaborate. Try it with pizza, especially without tomato with buffalo mozzarella and prosciutto mountain. Perfect with fried Italian style, because it cleans the mouth, refreshes, with the degreasing.
